The trio tested recipes and offered lunch to patrons free of charge in exchange for comments and suggestions on spicing, texture, and flavoring of their creations. Following weeks of hard work, The Mexican Manhattan Restaurant officially opened for business March of 1958. San Antonio locals quickly embraced the establishment as “their” Mexican food restaurant—their place to eat.
