Many years passed and the little restaurant began to outgrow its available space. Preparations were made for an expansion. Without ever closing the doors on its patrons, The Mexican Manhattan opened an entirely remodeled restaurant in February 1988. Boasting an enlarged kitchen and double the seating capacity, the long waiting lines were a thing of the past and business soared to ever-increasing heights.
